I think about roasted broccoli in the morning...in the afternoon, and at night. I LOVE it. I'm not the broccoli lover I used to be, but after tasting it roasted on a pan, it's amazing.
Ingredients:
2 heads broccoli, separated into florets
2 teaspoons extra-virgin olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
Directions
Preheat the oven to 400 degrees F.
In a large bowl, toss broccoli florets with the extra virgin olive oil, sea salt.
Spread the broccoli out in an even layer on a baking sheet.
Bake in the preheated oven until florets, turning after 10 minutes.
They are tender enough to pierce the stems with a fork at about 15 to 20 minutes.
Remove and transfer to a serving platter.
Enjoy!!

Sweet Bacon Peas

Ingredients:
2 Slices Bacon, chopped
2 Tbsp. Chopped onion
1 Garlic clove, minced
8 Oz Bag of Frozen Peas
2 Tsp. Dark Brown Sugar
1 Tbsp. Butter
Salt and pepper
Directions:
Cook Bacon until crisp. Drain on paper towels. Leave bacon fat in pan up to 1 tbsp. Add onion and garlic to pan, and cook until softened. Stir in peas and sugar. Cover and cook about 4 minutes. Turn off heat, add butter, bacon, salt and pepper.

Spicy Pasta de la creme
Faith and Neil just introduced me to Habanero Cheese from Costco this past week. Boy, is it REALLY good, and Hot. I thought I'd put some in my lunch yesterday.
Ingredients:
1 Link of Italian Sausage, cooked 8oz elbow macaroni
1/3 Cup Frozen peas
1/4 inch slice of Habanero Cheese off a large brick
1/4 Cup of Whipping cream
1 Tbsp butter
1 Tbsp of Frozen mixed Onions and peppers
Salt and Pepper to taste
Directions:
Cook macaroni to package directions, drain and keep warm. Put Peas and onions in a microwave safe dish, (I use Pyrex clear measuring glasses)and add enough water to just cover. Microwave 2 1/2 minutes or until hot.
In a small pot, add whipping cream, butter, and habanero cheese over medium heat. Stir occasionally until cheese melts.
Taste sauce, then add salt and pepper.
Slice sausage. Add Macaroni, sausage, peas and onions to your cream sauce. Stir and enjoy!

Tomato, tomatoe...
Tomato and Herb Salad from Sunset
Ingredients
- 2 pounds assorted vine-ripened tomatoes
- 12 to 14 Slices of Fresh mozzarella
- About 1 tsp. sea salt
- 1 1/2 tablespoons red wine vinegar
- 1/2 teaspoon honey
- 1/4 cup extra-virgin olive oil
- 2 to 3 sprigs marjoram
- 10 to 12 basil leaves
Preparation
1. Slice large tomatoes; leave small tomatoes whole, or cut in wedges or halves. Arrange on a platter with cheese.2. In a small bowl, whisk 1 tsp. salt, the vinegar, and honey until salt is dissolved; whisk in olive oil. Spoon over tomatoes.
3. Strip marjoram leaves and flowers from sprigs onto salad. With kitchen scissors, snip basil leaves and flowers over tomatoes. Sprinkle with salt to taste.
