I think about roasted broccoli in the morning...in the afternoon, and at night. I LOVE it. I'm not the broccoli lover I used to be, but after tasting it roasted on a pan, it's amazing.
Ingredients:
2 heads broccoli, separated into florets
2 teaspoons extra-virgin olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
Directions
Preheat the oven to 400 degrees F.
In a large bowl, toss broccoli florets with the extra virgin olive oil, sea salt.
Spread the broccoli out in an even layer on a baking sheet.
Bake in the preheated oven until florets, turning after 10 minutes.
They are tender enough to pierce the stems with a fork at about 15 to 20 minutes.
Remove and transfer to a serving platter.
Enjoy!!

Butternut Squash Chicken Pasta

Ingredients:1 Cup of Cooked Butternut Squash
1/4 Cup of Cooked unbreaded Chicken Breast Strips
1 Tbsp. Diced Green Pepper
1/2 Cup of Milk
1/2 Tsp. minced garlic
Salt and pepper to taste
6 Oz of Cooked egg noodles
| I dashed a little crushed red pepper on mine for some kick. |
Directions:
Puree your squash, adding a little milk at a time. Add garlic. Puree to mix. Taste, and add salt and pepper.
In a pan, saute' your chicken and green pepper. Mix all ingredients together. Enjoy!

For the Little Ones...Homemade Baby food

This ice tray is ready for the freezer. I did fresh pineapple, applesauce, peas, and mango. I didn't have my carrots cooked, or I would have put those in the mix too. My "little Oscar" pureed this up real nice.
Once frozen, I can put them in a Ziploc freezer bag and take out what I need. They also won't stick together, being already individually frozen. I'll just add some meat and pasta, potato, or cereal to this.
I also filled some cleaned baby jars with a banana, apple, mango mixture for the refrigerator. Ready to go!
