Spanish Chicken Pasta

Ingredients: 
1 6-8oz bag of precooked chicken breast strips
4 oz cream cheese
1 Cup Chicken Broth
1 Tbsp Flour
1/3 of a Red Pepper cut into strips
1 Garlic clove, diced
2 Tbsp Olive Oil
1/3 Cup of Salsa
1 Tsp of Paprika
7 Oz of cooked spaghetti noodles

Directions: 
Saute Garlic and Red Pepper strips in 1 Tbsp of Olive Oil for 1 minute.  Add Chicken, and cook for 2 minutes.  Empty this mixture into a bowl, and use this same pan for 1 tbsp oil and 1 tbsp of flour.  Stir till the flour is absorbed and whisk in chicken broth slowly, watching for lumps.  Add paprika.  Stir until bubbling, then add Chicken mixture and cover.  Cook for 5 Minutes.  Add Cream Cheese and salsa and stir.  Cook 1 more minute, then serve over spaghetti noodles. Add some fresh pepper and chives.  Very Tasty!

Roasted Vegetable Alfredo Pasta

This dish really hit the spot for me.  I served it with Jerk Chicken sliced at an angle to make it easy to fork.
The farmers markets seem to be in full swing now.  I got a HUGE zucchini for $0.75.  It makes enough for two meals.  I figure I'll slice and fry it up for the other.

Ingredients:
8 oz of pasta, cooked
2 Carrots
1 Small zucchini (I just cut the huge one I had in half)
1 Jar Alfredo Sauce
1 Stalk of Green onion
Olive Oil
Salt & Pepper

Directions:
Cut up zucchini and carrots into 1/2" to 1" pieces.  Toss with olive oil and salt and pepper. Roast at 400 F degrees for 20-25 minutes, turning vegetables halfway through.  Keep and eye on them, as zucchini cook relatively fast. Heat sauce and add to the pasta, then toss in the vegetables and season with slices of green onion.  I added some Tabasco to mine for a kick.  Delish!

Creamy Chicken Vegetable Pasta

Ingredients:
8 Oz cooked pasta
Frozen vegetables of your choice (I used corn, broccoli, and carrots)
2 Chicken breast cooked and sliced
4oz cream cheese, cubed
2Tbsp Butter
2Tbsp Flour
1 Cup of Milk
Salt/ Pepper

Directions:
Once you have all of the above ingredients, start your sauce.  
Melt butter in a pan, then add flour and stir.  Slowing add in milk, whisking as you pour.  You want to make sure there are no lumps of flour. Cook for about 2 minutes or until bubbly, then add cream cheese.   Melt into the sauce.  Add to your pasta, chicken and veggies.  Salt and pepper to taste, and Viola! Dinner is served!

Polenta with Sausage Marinara Rotini

 For those of you who haven't tried Polenta, go for it! It is a cheap filler and tastes great. My family knew it as Mush.  Cornmeal cooked.

This is EASY to make.  I used to cook it on the stove, but it takes more attention than I'm able to give with a One year old crawling around.  Even in this picture above,you can see, I practically burnt the Garlic bread under the broiler because I had too much going on.  Here we go:
Microwave Polenta

Ingredients:
3 Cups Water
1 Cup Cornmeal
1 Tsp Salt
 For Frying:
2 Tbsp Olive Oil
Directions:
Stir together and pour into a Pyrex bowl sprayed with cooking spray. Cook 7 minutes in the microwave on high, stirring every two minutes.  Take out of microwave and pour onto a baking sheet keeping it about 1 inch high.  Mine was just to one side of my baking pan. Flatten with a spatula. Cool for 20 min.  Using a cookie cutter, cut your desired shape.  I wish I had a circle one, but I had a scalloped edged square which of course works just fine.

Heat a frying pan with 2 tbsp of olive oil.  Fry them for 4-5 minutes on each side.  Your just looking for a little browning.

I cooked up some ground Italian sausage and added some canned marinara sauce.  Hunts is pretty good!  Cook up some noodles, add your sauce and serve with the polenta.  Sprinkle with Parmesan cheese and sliced green onion!

Sloppy Joe Pasta


I made too much Sloppy Joes the other day, and thought..what could I do with the rest?
So, I tried this;
Ingredients: 
1 Cup or so of leftover sloppy joe meat
1 Box of Velveeta Shells and Cheese

Directions:
Make Pasta as directed. Heat up sloppy joes.  Drain pasta, and add cheese and sloppy joe. Dash on some Crushed red pepper and dinner is served!

Spicy Pasta de la creme

Faith and Neil just introduced me to Habanero Cheese from Costco this past week. Boy, is it REALLY good, and Hot.  I thought I'd put some in my lunch yesterday. 

Ingredients:
1 Link of Italian Sausage, cooked
8oz elbow macaroni
1/3 Cup Frozen peas
1/4 inch slice of Habanero Cheese off a large brick
1/4 Cup of Whipping cream
1 Tbsp butter
1 Tbsp of Frozen mixed Onions and peppers
Salt and Pepper to taste


Directions:
Cook macaroni to package directions, drain and keep warm.
Put Peas and onions in a microwave safe dish, (I use Pyrex clear measuring glasses)and add enough water to just cover. Microwave 2 1/2 minutes or until hot. 
In a small pot, add whipping cream, butter, and habanero cheese over medium heat.  Stir occasionally until cheese melts.
Taste sauce, then add salt and pepper.
Slice sausage. Add Macaroni, sausage, peas and onions to your cream sauce. Stir and enjoy!
