Meat and Veggie Quiche

Ahh...I finally made a Quiche. It's been awhile since I whipped up some eggs and tossed them in the oven.


 She is at this bookcase several times a day talking to the books. Hopefully she'll be as excited to read them when she gets older!  If they were plants, they'd probably get bigger. ;)

Ingredients for Tasty Quiche:
   
1   Pie Crust
4    eggs, lightly beaten 
1-1/2  cups  milk
1/4  cup  Torn Fresh Spinach  
1/4 Cup Sliced Fresh mushrooms
1/4 Cup diced green pepper
1/4  teaspoon  salt 
1/8  teaspoon  black pepper
Dash ground nutmeg 
3/4  cup chopped cooked ham or you can use salami
1  cup  shredded Swiss
1/2 Cup Shredded Cheddar  
1  tablespoon  all-purpose flour

Directions

1.Bake pastry shell in oven per directions on package.
2. Meanwhile, in medium bowl stir together eggs, milk, green pepper, mushrooms, spinach, salt, pepper, and nutmeg. Stir in meat. In a small bowl toss together the cheese and flour. Add to egg mixture; mix well.
3. Pour egg mixture into hot, baked pastry shell. Bake in the 325 degree oven for 45 to 55 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before serving. 


Helful Tip
Renew your lips using your chapstick and toothbrush.  
Put on chapstick and use your toothbrush to scrub your lips. Repeat until all dry skin is off. Rinse your lips and dry with a wash cloth. Add more  chapstick.  Its not Mary Kay's Stuff, but it's pretty amazing. Enjoy!

My Migas

I needed a quick lunch with some substance, so I made this. Would be great for a brunch as well.



Ingredients:
3 Corn Tortillas -Cut into strips
1 green onion, sliced thin
1 Jalapenos diced
3 eggs, beaten
1/4 cup Shredded Swiss Cheese
2 Tbsp. Shredded Sharp Cheddar
Salsa
Sour Cream

Directions:
Fry the torillas in oil until they are golden but still soft.
Add onion and jalapenos and saute for two minutes.
Add the beaten eggs and cook until they are almost set, stirring occasionally. 
Spread cheese on top of eggs and cover the pan. 
Cook until cheese is melted.
Serve with salsa and sour cream.

Eggs in a basket

Eggs in a basket is fun to make, and a change from the same 'ole thing.

 

 

 

 

 

 

 

 

 

 

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients:

  • 2 slices whole wheat bread
  • 1 Tbsp. butter
  • 2 large eggs
  • Adobe seasoning to taste  (or salt and pepper)

Preparation:

  1. Heat a large frying pan over medium-high heat.Place 1 teaspoon of butter on the griddle.Use a cookie cutter to cut out your favorite shape in the center of each piece of bread.

  2. Butter one side of each piece of bread, including the cutout pieces, with the remaining butter.Place the bread, butter side down on the griddle.
  3. Break one egg into a small dish. Gently slide it into the hole of one of the bread slices.Dash some Adobe Seasoning or salt and pepper. Cook until the egg is golden on the bottom, a minute or two. Flip and cook the other side, about 1 minute.
  4. Flip the cutout pieces of toast to cook on the other side until toasted, another minute or so.
  5. Serve immediately.

How to Boil an Egg

All these years, I've boiled eggs the same way.  But, I've just learned a money saving way to get the same results.  Cover eggs with an inch of water.  Toss in some salt, and get to a boil. Once the water is boiling, cover, and shut the stove off. Set the timer for 10 minutes. Run eggs under cold water to cool.

Breakfast to go - Egg English Muffins

Ingredients:
3 Boiled Eggs
1 Tbsp Mayo
1 Tsp. Dijon Mustard
1 Dash Worcestershire sauce
1/2 Cup Shredded Cheddar Cheese
10 Pepperoni slices-Spicy if you dare.
2 English Muffins -Split

Directions:
Dice up the boiled Eggs. Mix together with next 5 ingredients and put on top of split english muffins.
Broil for 4- 5 Minutes or until a little browned.
