My Migas

I needed a quick lunch with some substance, so I made this. Would be great for a brunch as well.



Ingredients:
3 Corn Tortillas -Cut into strips
1 green onion, sliced thin
1 Jalapenos diced
3 eggs, beaten
1/4 cup Shredded Swiss Cheese
2 Tbsp. Shredded Sharp Cheddar
Salsa
Sour Cream

Directions:
Fry the torillas in oil until they are golden but still soft.
Add onion and jalapenos and saute for two minutes.
Add the beaten eggs and cook until they are almost set, stirring occasionally. 
Spread cheese on top of eggs and cover the pan. 
Cook until cheese is melted.
Serve with salsa and sour cream.

Sweet Potato Latkes

Sweet Potato Latkes

  • 2 medium sweet potatoes, peeled and grated (equals about 4 cups)
  • 2 Tbsp. Applesauce
  • 2 green onions, finely chopped
  • ½ small onion, grated
  • 1 cup Bisquick
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • Sprinkle of black pepper
  • Canola oil for frying
  • Sour cream as “garnish”.

Directions:
In a bowl, stir together potatoes, green onion, onion, apple, egg, salt, and pepper. Gradually add the bisquick mix and stir to combine.
Heat oil in a deep skillet over moderate high heat until hot but not smoking. Working in batches of 4 or 5, spoon a large spoonful of the mixture into the oil and lightly flatten.
Reduce heat slightly and cook for about 2 minutes on each side or until golden brown. Transfer latkes with spatula to a plate layered with paper towels.
Once they sit for a moment or two and drain, transfer them to a cookie sheet. I keep them warm in the oven, till I serve them.

These are really good! I've had white potato ones before, but these are much better for you and have more flavor.

Texas Pete BBQ Pasta

As promised, here is a recipe to use up the leftover BBQ chicken from your crockpot.  I hope everyone is doing well.

Ingredients:
8oz tubular pasta cooked, drain, do not rinse.
2 tbsp butter
1 cup shredded cheddar cheese
1/2 cup sour cream
1 tsp crushed red pepper
3 tbsp BBQ sauce ( I used the Famous Dave's again)
1 cup of BBQ chicken, diced

Directions:
Combine all ingredients over medium heat, serve.
