Chipotle Chili Chicken Sandwich

 
I wanted to try something different for dinner, but use up what I had in the fridge.  I had leftover Chili spiced chicken that I had baked.

Ingredients:
Chicken cooked and sliced thin at an angle
Lettuce
Red onion
Spicy Chipotle sauce by Taco Bell ($1.50 in the store)
French Bread

Directions:
Assemble in the order you like. 

Enjoy!

I had this with potato salad and baked beans.  Nice simple dinner.

Southwestern Egg White Omlet - Guest Post Missy

Ingredients:
2 Cups of Eggs Whites (from a carton)
1 slice Oven baked ham, chopped
1 Tbsp. red pepper, chopped
1 Tbsp. green pepper, chopped
1/2 Cup Finely Shredded Sharp Cheddar Cheese
Sour Cream
Salsa

Directions:
Spray Pan with non stick cooking spray.  Mix all ingredients and pour into hot pan.  Cook on medium heat for about 6 minutes.  Fold over, and cook an additional 2 minutes.  Slide onto plate and top with salsa and sour cream.

Toddler Pants for 12-24 Months

I have been looking for leggings for my little girl.  I've seen some cute stuff, but I thought I'd try my hand at it.




I took a pair of her pants that fit well, and folded them in half.  I folded my fabric in half so I had a fold.  I cut around the pants leaving a 1/2" seam allowance.  You need to of the same. 


Right sides together, I sewed the crotch area only, stopping by the leg. I then sewed the hem of the pants.


Turn Pants, so they look like regular pants and pin and sew around from one leg around to the other.  Pretty self explanatory at this point.   

I added pajama elastic to the waist.  I made it 3/4 of the waist of the pants,and stretched it to fit as I sewed.



They turned out so cute!  I love 'em.  They take 15 minutes, which is pretty fast.
