Fresh Strawberries...what to make?

 Strawberries were only a Buck 99 at my favorite grocery store, Town & Country. Now the questions is..
what to make?   Christie and I  smashed up some strawberries to go over our cupcakes..
What's that white frosting??  Cream cheese frosting of Course! Yum! These are also my favorite sprinkles!!! I wasn't sure when to stop!

Zucchini Boats

Since it is St. Paddy's Day, here's a little green for you.
I made up these Stuffed Zucchini Boats last night. They were really good. Let's do it!
Ingredients:
3/4 lb Zucchini, halved
3/4 Cup dry seasoned bread crumbs, or smashed up croutons
1oz Shredded cheddar cheese
1oz Shredded mozzarella cheese
1/2 tsp salt
1 egg, beaten
1 tbsp butter, cut up
Directions:
Bring a pot of salted water to a boil. Add Zucchini until tender about 10 -12 minutes. Scoop out the fresh of the zucchini, making the boat.
Preheat oven to 350f degrees. 
In a bowl, combine all the ingredients, including the flesh of the zucchini, but not the butter.  
Put this mixture inside the boats, heaping. 
Dot with the butter. 
Bake for 20 minutes. Enjoy!

Easy Cinnamon Sugar Cookies

 This makes a nice small batch of cookies.  Just enough for a few people. You can double the recipe, easy peasy, if you want more. I like that I have all the ingredients on hand.  Today it's over 60 degrees! I'm so happy!

Ingredients:
1 Stick of butter
1/2 Cup of Sugar
1/4 Tsp Vanilla Extract
1 Cup of flour
Cinnamon and sugar for rolling dough.

 Directions: 
Preheat oven to 350F degrees.
Measure out flour into a bowl and set aside.
Using a mixer, cream butter and sugar.
Add Vanilla.
Slowly add flour to the butter mixture. 
Mix Well until you have a soft dough.
Scoop up a Tablespoon of dough and roll into a ball. 
Roll in some cinnamon and sugar. 
Place on a greased cookie sheet. Unless you have one of those cool Silpat mats...I wish!
Place balls on sheet and press down a bit to flatten.
Bake at 350F degrees for 10-12 Minutes until edges are a golden brown. 
Cool on wire rack. Makes about 25 cookies.
