Cucumbers are in season, and these make a great appetizer or addition to a meal.
Ingredients:
Fresh Focaccia (I made mine in my bread machine and then baked it)
2 Tbsps Olive Oil
3 Ounces of Feta
1/2 Tsp Lemon Juice
Salt and Pepper
1 Small Cucumber,sliced thin.
Directions:
In a small bowl, mash together feta, 1 Tbsp oil, and lemon juice with a fork. Season with salt and pepper. Spread feta mixture evenly over Focaccia. Add cucumber slices over top. Drizzle more olive oil, lemon and salt and pepper over top. Serve.

Honey Ginger Chicken
Ingredients:
2 Chicken Breasts
1/2 cup Honey
1/2 cup Soysauce
1 cup water
4 tablespoons cornstarch
1/2-1 teaspoon ground ginger
1/2-1 teaspoon red pepper flakes
1 tablespoon toasted sesame seeds
Directions:
Cut Chicken into bite size pieces.Toss in 2tbsp. cornstarch.
Heat skillet, and add chicken to 1 tbsp oil olive.
Saute chicken for 6 minutes or until cooked through.
Mix together honey, soy sauce, water 2 tbsp cornstarch, ginger, and red pepper flakes. Whisk until smooth. Pour sauce over chicken.
Cook until sauce starts to thicken.
Sprinkle with sesame seeds.
Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.
This recipe is really wonderful. Easy to make and very satisfying. I hope you'll try it!

Hot...peppers
Seems like one of the hottest summers in years. My potted garden is growing and I'm finally getting peppers. The red is the super chili.
Something ate all my broccoli, but it is making a comeback. My banana peppers and green peppers are well on their way too.
