Whoopie Pies!

I woke up today, sunny side up.  I'm not really sure why...
because I was especially exhausted.  I'm blaming the unusual heat we've been having. If not that, then it's because my daughter is working on 2 more teeth.  She wakes up crying every so often, and goes back to sleep. 

Poor baby.  Again at 5 this morning she was crying...I got all the way to her room and waited, and lo and behold, she stopped. Yea! I eagerly went back to bed.  The sheets never felt so good. I've never loved sleep as much as I do now after having a baby. It really makes you appreciate it.

Well, we celebrated our 6th Wedding Anniversary Saturday.  I made the Whoopie Pies! I'm so glad they turned out.  I can cook, but I'm the first to say that baking is not my strong point.

Whoopie Cookie 
Ingredients: 
1/2 cup Crisco 
1 cup sugar 
2 egg yolks (save whites for filling)
5 tablespoons cocoa
2 cups flour 
1 teaspoon baking powder 
1 teaspoon soda 
1 teaspoon salt 
1 teaspoon vanilla 
1 cup milk

Cream Crisco and sugar together. Add other ingredients. Use a piping bag to squeeze out the batter into about 2” circles. 

Directions:

 Bake for 8-10 minutes at 375 degrees.
 Now make the filling...

Filling:
1 Cup of Crisco
4 Cups of Confectioners Sugar
4 Eggs Whites
Pinch of salt
2 Tsp. Vanilla
Beat all Ingredients until creamy, about 2-3 Minutes.  Cool the cookies, and then spoon this frosting on.  Add another cookies on top. Your Finished! Now go give your husband some whoopie...whoopie pie,,uh cookie!

Easy Chocolate Cake from Scatch

Ingredients

1 cup all-purpose flour
1 cup sugar
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
1/4 cup cooking oil
1 teaspoon vanilla
1 egg
Chocolate Syrup for serving

Directions 

1. Preheat oven to 350 degree F. Grease and lightly flour a 9x1-1/2-inch round or 8x8x2-inch baking pan.
2. In a large mixing bowl combine flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add milk, oil, and vanilla. Beat with an electric mixer on low speed just until combined. Beat on medium speed for 2 minutes. Add egg and beat 2 minutes more. Pour batter into prepared pan.

3. Bake for 30 to 35 minutes or until a wooden toothpick comes out clean. Cool cake on a wire rack for 10 minutes. Remove cake from pan. Cool thoroughly on a wire rack. To serve, drizzle with Chocolate Syrup!
