Fast Lunch: Olive Oil and Garlic Couscous with Grilled Chicken


 I've always loved couscous, but now that Aldi carries it I buy it all the time.  All you have to do is boil water and then add the couscous and cover.  5 Minutes later, its ready!  I also grilled up some chicken and sliced it to round out the meal. 
 It's high in fiber, whole grain, definitely a plus. You can add so many things to this.  What would you add?  Please stop by and leave me a comment!

Tater Tot Breakfast bake

I really like breakfast but I'm picky.  Cereal doesn't cut it; I'd just rather not eat anything.  This, however, hits the spot with Potato, Eggs,and Cheese.  You could also add sausage or bacon if you like, I just didn't have any on hand.  Super versatile recipe.

Ingredients:
4 Eggs
1 Cup Shredded cheese
3/4 Cup Milk
Salt
Pepper
10oz frozen tater tots

In and 8x8 pan, spray non stick spray.  Turn oven to 350F degrees.  Mix eggs and milk and add salt and pepper.  Add cheese, stir and pour in pan.  Add tater tots on top.  Place into your oven for 45 minutes or until egg in the middle is cooked.  Turned out really good, and I got last nights dishes done while it baked.  My 2 yr old loved it too, which is a definite plus!

Christmas is coming...

I saw this on Pinterest.  So cute!  Christmas is my favorite time of year.  I love it.  And I love decorating for it, especially now with a preschooler.  You can find the kit here.  I'm going to check out Michael's or look around Pinterest to see if I can do this another way too.  What a fun thing to do with your kids!
