Honey Roasted Potatoes

Do you have a vice? or something you adore to do? If I had to name a couple, it would be cooking + sewing.  I don't mind the dunkin donuts run either.  That place just smells like happiness. You?


Ingredients:
4 Medium Potatoes, peeled and cubed
1 Tbsp Honey
Pepper, to taste
1 Tbsp Dijon Mustard
2 Tbsp Olive Oil

Directions: 
Preheat oven to 375 F Degrees.  Mix honey, pepper, Dijon mustard and Olive oil in a bowl.  Using a whisk works well.  Then add potatoes and mix all together.  Spray non stick spray on your baking pan, and add potatoes.  Bake for 30-35 Minutes, until fork tender. We had it with fish sandwiches and corn.  Very nice flavor.

Reversible Baby Boy Vest

 I saw a super cute tutorial on how to make this vest over here.
 I used jean and some "pleather" I had in my fabric stash.   This vest was easy to make and now I'm coming up with a girly version of my own.  I didn't add any buttons to this one, but you can of course. 
 I think I'll be making another one, but with cotton fabric.  It would definitely make the arm holes easier to do.
 This one went to one of my nephews.  Now I'm on to make a shirt for spring for my little one.

Baking Bacon - the easy way to cook bacon

 Beautiful Bacon, done the bak'in way.  I just tried this yesterday, and I love it.  I also reheated a piece in the microwave and it was good!  I plan on making twice baked potatoes today, and wanted to have some of this for the topping.

Start with a cold oven.  Spray baking pan with non stick spray, or if you choose to use a wire rack atop your pan, spray that.  Place baking strips on pan and place in oven.  Turn on to 400 degrees F and bake for 14-16 minutes.  Keep an eye on it towards the end.  Once cooked, take off pan immediately and place on paper towel.  If you leave them on the pan they could overcook. 

Now enjoy bacon anytime of the day!
