Our daughter's new hiding spot for her books...right in the couch. So just in case I'm sitting down, she can also plop down and hand me a book to read to her. What a smart kid.

Gifting Cookies + Dinner
St Paddy's Day is coming up and this could be a sweet way to give the gift of cookies.
For Valentine's Day, I made Snicker doodles and put them in this cute pack for my husband.
I used wax paper and fabric. I cut the wax paper to the size I wanted with my pinking shears. I then did the same with my fabric, just a shorter version so it would slip over top of the paper, and add some flair.
I sewed up each side and put one inside the other. Really fun and fast. I believe the blog Skip to my Lou gave me the idea for the wax paper.
So what's for dinner tonight?
We're having:
Baked Chicken, sliced over top the Pasta
Monterrey Jack Cheese Pasta (I'm using a recipe similar to this)
French Bread, sliced, buttered, and broiled
Roasted Carrots

Creamed Spinach
This creamed spinach is so tasty and comforting. I hope you'll try it.
8 oz of frozen spinach
2 Tbps Parmesan cheese
2 Tbps Flour
1 Cup Milk
2 Tbsp butter
Salt
pepper
1/2 tsp Garlic powder
1/3 Cup Mozzarella Cheese
Defrost spinach and squeeze out as much water as you can. Heat a pan and add butter to melt. Once melted add the flour and stir to mix. Slowly add milk with a whisk watching for lumps. Once smooth, add spinach, Parmesan cheese, salt, pepper, garlic powder. Warm up over medium heat. Add mozzarella cheese, stirring to melt. Serve.
This dish is always welcomed by me and is great for lunch the next day. I like to add a little Parmesan cheese to the top too.
